Cameroon is Africa’s beating heart, a beautifull country with active volcanoes, white sand beaches, thick rainforest and memorable parched landscapes broken up by the bizarre rock formations of the Sahel. So Cameroon has basically everything you expect Africa to have. There are both French and English regions in Cameroon, btw have I mentioned the rest of the 230 local languages they in Cameroon! In contrast with it’s neighbours Cameroon enjoys stability. The infrastrucuture is great, so traveling in Cameroon is safer and easier then in many other parts of Africa.
Here are some fun facts about Cameroon
- Masks of people there carrying different messages are a very important part of their culture.
- Cameroon is the first African country to reach the quarter-final in soccer world cup.
- Cameroon is home to the second wettest place in the world, Debuncha at the foot of the Cameroon mountains records annual rainfalls of 400 inches (10,000mm), this is about 20 times the annual rainfall recorded in England. (and here I was thinking I lived in a rainy country)
- The name Cameroon (also Cameroun in French) is derived from Rio de Camarões (the River of Prawns) the name given to River Wouri by Portuguese Explorers in the 15th century due to its abundance of prawns and crayfish.
So this week I made Kati Kati or African Grilled Chicken! It was a delicious weeknight meal and I served it with spinach.
Ingredients: 3-4 pounds of chicken, skin- on cut up into desired pieces, 1 ¼ teaspoon salt, 1 tablespoon onion powder, 1 ½ tablespoon garlic powder, 1 teaspoon white pepper, ½ teaspoon cayenne pepper, 1 teaspoon bouillon powder (you may replace with salt),
Ingredients sauce: 2 fresh tomatoes, , ½ cup water or more as needed, chicken bouillon to taste

Welcome C! I can’t believe it we have been through al the countries with an A and a B time has flown by and I have learned so much already about cooking and about the world. I have to admit it makes me little proud that it’s been going so well! Thanks to all of you! So later this week I promise I will bake a nice big cake and add the recipe :D.
But now Cambodia, when I started googling Cambodia pictures of hidden temples and statues in the rainforest came up. It reminded me a little of Indiana Jones and The Temple of Doom. But apparently that was filmed in Sri Lanka (I get distracted very easily, I have the attention span of a goldfish, it’s disturbing, we call it sdbing = studydodgingbehaviour). Cambodia seems to be known for it’s deep blue seawater, enchanting rainforests, fairytale like mangroves, great food, majestic temples, and happy people. So what else it there about Cambodia that your probably don’t know:
- Tarantula kebabs are a popular delicacy in Cambodia.
- Cambodia is the most unexplored country in Southeast Asia. Here tourist can really dive into the life of ancient Asia. Even today, in Cambodia it is possible to meet a person who has never watched TV.
- The most common myths about Cambodia: There is a war, it is very dangerous here, everyone walking around with guns, kill people, hunger, poverty and unrest.
In fact, Cambodia is certainly not a rich country, but it is so fertile that no one is starving here. The war ended 30 years ago.
- Cambodians love to sleep outside in the hammocks.
I love South East Asian food, it’s so light and healthy. This week I made Pork and Rice Soup! It was great, when I put the pan on the table my brother mentioned it looked like glue! But it’s sooo yummy, a great budget midnight meal!
Ingredients Marinate pork: 200 gram ground pork, 1 tablespoon Thai fish sauce, 2 teaspoon sugar
Ingredients Broth: 9 cups of water, 2 stalks of lemongrass (cracked), thumb size piece of ginger peeled and smashed, 4 flat anchovies (packed in oil), salt to taste, 3/4 cup of jasmine rice (rinsed in cold water and drained), 2 table spoons of peanut oil, 5 cloves of garlic,
Ingredients Toppings: 1/4 cup of Thai fish sauce, 1 bird chile (chopped), 4 shallots (peeled and diced), 2 cups of beansprouts, 1 bunch of scallions thinly sliced, 1/2 roasted unsalted peanuts, 1 lime, salt and pepper
In a small bowl stir the pork with fish sauce and sugar. Set aside. Place water, ginger, lemongrass, salt and dried shrimp (if using) in a large heavy pot and bring to a boil. Boil steadily for 5 minutes. Add rinsed rice to the pot. When it returns to a boil, lower heat and simmer gently, uncovered, until the rice is tender, about 15 minutes. While the rice is cooking, heat 2 tablespoons oil in a skillet over medium-high heat. Add shallots and cook, stirring constantly, until tender and golden, about 3 minutes, Regulate the heat so they don’t burn. Transfer shallots to a condiment bowl. Add 1 tablespoon oil to the same skillet and toss in the garlic and anchovies (if using) Stir-fry for 30 seconds, until fragrant. Add the pork and cook, stirring and breaking up any lumps, until the pork is no longer pink, about 3 minutes. Add the pork stir-fry to the soup pot, once the rice has finished cooking. Stir through. Season with salt, to taste. Mix the bird chile with ¼ cup fish sauce in a small condiment bowl. Set aside. Just before serving, gently reheat the soup. Divide the shredded cabbage or sprouts among the bowls. Add a pinch of shredded basil and a pinch of scallions to each bowl. Ladle the soup on top. Add a bit of each topping and a generous grinding of black pepper to each bowl. Serve with a lime wedges and prik nam pla on the side. Enjoy!
I found some Cambodian popmusic this videoclip is definatelly worth watching, i don’t think you can find anything more dorky on the entire internet, but it’s hilarious. If you know the lyrics you can even sing along!
Burundi, well this one is pretty special to me, since my nephew is a quarter Burundi, I invited him and my sister over for this special dinner. Not my dad, but his other grandfather is from Burundi. Let’s get started! At the beating heart of Africa lies a small country called Burundi. Although Burundi is among the poorest countries in the world it has many attractions worth visiting: it’s legendary lake Tanganyika with a wild variety a birds, it’s mountains and valley’s, large savannah’s and enchanting forests. The people of Burundi have suffered a lot and are still suffering under de consequences of years civil war and hunger.
Here are some fun facts about Burundi:
- Drumming is an important part of the Burundian cultural heritage.
- Kirundi and French are the official languages of Burundi. The country’s motto “Ubumwe, Ibikorwa, Iterambere” in Kirundi means “Unity, Work, Progress”. The motto of the country is also expressed in French – “Unité, Travail, Progrès”
- Soon after Burundi gained independence from Belgium, the mountainous country enjoyed the distinction of being one of the first black republics in the world.
This recipe is served as a side dish, with rice. It’s deliciously creamy
Ingredients: 200 gr chopped spinach, 1 tablespoon peanutbutter, 1 cup of coconut milk, 1 chopped onion, 1 tablespoon of curry powder, 1 peeled and diced tomato, 1/2 dried chili pepper
Wash the spinach, roll leaves together and chop. Pop the tomato in boiling water for 30 seconds to 1 minute, peel and chop. Peel and chop the onion. Mix the peanut butter with the coconut milk. Heat the oil over medium heat in a large frying pan. Add the onion, tomato, salt and curry powder and sauté for 5 minutes. Add the spinach, continue cooking for about 15 to 20 minutes. Add the peanut butter and coconut milk mixture. Simmer, for another 5 minutes, stirring constantly. The curried spinach and peanut butter may be served as a side dish or as a full meal with rice
First of all it was not easy to find information about Burkina Faso. The name Burkina Faso means land of the honest men. Originally it was named Upper Volta, but in 1983 Capt Thomas Sankara seized power and renamed the country Burkina Faso. The country has been plagued by misery and revolution. Ouagadougou or Ouaga is the capital, it lacks standout sights and its architecture doesn’t have much to turn your head, but it thrives as an eclectic arts hub, with dance and concert venues, live bands, theatre companies, a busy festival schedule and beautiful handicrafts. Although Burkina Faso is one of the poorest countries in the world, it can still provide enough food, a few years ago The campaign of Broederlijk Delen 2007 focused on Burkina Faso. In the campaign movie Dutch onions and potatoes sold on the local market. However, that is not support, but rather a disruption of the local economy. The local farmers can not sell their onions by the dumping prices of Dutch goods.
Here are some fun facts about Burkina Faso
- Burkina Faso is home to 60 different ethnic groups, each with their own variety of folk music.
- The school week runs from Monday through Saturday. Schooling is in theory free and compulsory until the age of 16. According to UNICEF, only 81% of students reach the 5th grade.
- Disabled and older people live with their families and are fully accepted.
- The Mossi – one of the ethnic groups in Burkina Faso are known for their antelope masks which are over 2m (7ft) high and painted in red or white. The masks are usually worn at funerals and when guarding certain fruits.
The juice i made this week is said to have healing powers, which is great because i have been feeling a little under the weather lately. Ginger is so healthy it’s good for your kidney’s and blader and on top of that it gives a great nice to everything. Ingredients: 4 cups of water, 70g ginger, peeled and washed, 300g pineapple, peeled and washed, 1/3 cup lemon juice, ½ cup of sugar
Add the ginger, pineapple and lemon juice in a food processor. Then add water and mix well until the liquid is home gene. You can also use a mortar and pestle and grind the ginger and pineapple and mix well with the water. Filter the resulting mixture through a sieve to remove the juice. Add the sugar according to your taste. Keep in the refrigerator for 2 hours.
